WHAT'S A KEY LIME?
The KEY LIME, scientifically named citrus aurantifolia (or aurantiifolia) Swingle, also known as the West Indian or Mexican lime, is native to Southeast Asia. It is believed to have been originally introduced to the Americas in the 16th Century by Spanish & Portuguese explorers. The lime made its way from their sailing ships to the islands in the West Indies, growing its way through the Caribbean and eventually growing in the Florida Keys, Mexico and California. The warm tropical climate of the Keys, Mexico and Central America provided an ideal environment. After a hurricane in 1926, the lime was given the name by which be know it today: KEY LIME.

Key limes are now found in warm tropical regions throughout the world. They are smaller and more tangy than the traditional Persian lime, but when Key lime juice is combined with the INGREDIENTS OF AN ORIGINAL 1860'S recipe, the result is AUTHENTIC KEY LIME PIE: a sweet-tart, decadent, refreshing alternative to traditional desserts.

Our Key lime juice is made differently than what most major manufacturers use in their pies: its squeezed fresh, concentrated and then sent to us unpasteurized without any added preservatives at about 25 degrees. This allows us to reconstitute it to the perfect consistency for our pie and offer you an all natural product free of added chemicals for the best flavor going!
